Well shoot. If you all had a penny for every time I promised I wouldn't go so long without a post, you'd have quite a pile of pennies! Lesson learned, Tommy, lesson learned. So today, I won't make an empty promise. Instead, I state the facts. Life happens. Things get busy. Responsibilities pile up. A few weekends back a took a trip down memory lane and went out to Parts and Labor with some friends from college. 4 years is much too long to go without seeing such great friends! During out senior year at the University of Illinois, we frequented a Tuesday night event called 'Ride the Rail.' This consisted of arriving at Legends Bar and Grill at 2:00 in the afternoon and closing it down 12 hours later. The amount of alcohol consumed on those fateful nights is absurd. Well, being that it was our first night together in 4 years, naturally, our subconscious told us that we could drink like we used to.

Let's just say that after 4 years of slowly figuring life out and becoming adults, our bodies are no longer able to withstand the abuse that we used to put it through. Sunday we were on the struggle bus.

A friend from work had told me about his favorite hangover ritual. The morning following a night of heavy drinking, he would wake up, drink a glass or two of water, pop a few Tylenol, throw a few things into a crock pot, set it on low, and climb back into bed. It's genius. We all know that eating is imperative when hung over, even though that may be the last thing on our minds. So, why not something easy?

So whether it's for a hangover recovery meal or a meal for actual enjoyment, this BBQ-Sriracha Pulled Chicken is to die for! Very easy and very delicious!

BBQ-Sriracha Pulled Chicken

4-5 boneless chicken breasts Sriracha hot sauce, to taste 1 bottle BBQ sauce

Instructions:

  1. Put all ingredients into crock pot. Put on low and cook for 8 hours.
  2. After 8 hours, use 2 forks to shred chicken.
  3. Serve on dinner roles or buns.
