I love buffalo sauce. On pizza. On risotto. On shredded chicken. I love buffalo sauce! A special thanks to Jessica at How Sweet It Is for this amazing recipe! It'll definitely be one of my go-to pizza recipes!
This past Friday I was in the mood for something a little more along the lines of guilty pleasure... Yes, I know that pizza is not the healthiest food out there, but it sure tastes good! And homemade pizza is even better.
I start my full-marathon training today, so I think it was an effort to eat good food before having to be conscious of the food that I put in my mouth until September 23, 2012. Dear Lord, I am running a full-marathon. 26.2 miles. What the heck was I thinking? Let's pray that I don't die.
If I do, at least I know that I had this deliciousness beforehand!
Grab an ice cold beer and enjoy this awesome homemade pizza!
I typically would make my own pizza dough, but I had NO time - working a morning shift at LexiWynn and an afternoon shift at Starbucks... 2-3 hours to allow the dough to rise? Yea, I was too hungry to wait... So I ran over to the closest grocery store and bought ready to bake pizza dough.
Let it be known that I hate blue cheese. Eating something that tastes like moldy stinky feet is just not something that I find appealing, let alone appetizing. However...I still used it in this recipe. And surprisingly, there was a hint of the blue cheese. It was not overpowering at all. I kind of enjoyed it... I did however skip out on the gorgonzola cheese. Come on, that is just pushing your luck - blue cheese AND gorgonzola?! Ha. All other cheese? Obsessed.
1/4 cup buffalo wing sauce 1/4 cup blue cheese dressing 1/4 cup ranch dressing 10 ounces chicken, shredded 1 cup shredded, smoked cheddar cheese 1 cup shredded monterey jack cheese 1/2 cup parmesan cheese 1/4 cup crumbled gorgonzola buffalo wing sauce for drizzling
Preheat oven to 375° F. Roll out pizza dough so it fits a pan – I used a regular round pizza pan. In a bowl, mix buffalo wing sauce, blue cheese and ranch. Spread over dough as a sauce. Top with 1/2 cup each of cheddar and jack cheeses. Add chicken on top (I used a food processor to shred up the chicken), then remaining cheeses including parmesan. Drizzle liberally with buffalo wing sauce. Add crumbled gorgonzola on top.
Bake for 20-25 minutes.
