Chicken Salsa Stew

I have to admit, sometimes I forget that not everyone can, or would want to, attempt difficult recipes. So while I made a difficult recipe for myself last time around, here is an equally delicious recipe that is absolutely simple to make! Really, an ape could be taught to made this stew.

Mix. Cook. Shred. Serve.

Did I mention that there are only 4 ingredients in this recipe? This meal could not be more perfect for a quick family weeknight meal or college students on a strict budget who may not want to put a whole lot of money and effort into making a meal between classes, or let's face it, partying. So, give it a try!

Soup, soup, soup. I know, it's a cliché fall meal option. But it's perfect and delicious. Fall and winter meals have their defining characteristics. In the dead of winter, especially during a Chicago winter, you want nothing more than a hot meal to warm your insides. A little spice. A little hot food. It's perfect.

Chicken Salsa Stew

4 chicken breasts 1 can of corn, drained 1 can of black beans, drained jar of salsa

  1. Mix all ingredients together in the crock pot.
  2. Cook in a crock pot on low for 8 hours, or on high for 3 hours.
  3. Before serving, use forks to shred the chicken breasts.
