Lately I have been noticing myself getting rather stressed and anxious over the littlest of things. It's raining. I get annoyed. The train is slow. I feel as though my day is ruined. A TV show didn't end how I wanted. WHAT IS HAPPENING TO THIS WORLD? The best thing that I have been able to do is force myself outside of my apartment, without my telephone. No text message. No phone calls. No Instagram, Twitter or Facebook.
Farmers' market season is the absolut best, mainly for the fact it gets me outside in the fresh air. I am able to walk around, interacting with people, soaking up the summer, and just allowing myself to be in the moment.
Farmers' markets = fresh produce. Let's be honest, I about lose myself at the site of juicy blackberries and perfect ears of corn. Fresh juices. Loaves of bread baked that morning. What else could a person want? When presented the opportunity to work with Absolut Elyx, I knew that I wanted to make a cocktail that emulated this season. Something light and refreshing. Something that utilizes the gorgeous produce that you can pick up at your local market. Something that you can sit around a table enjoying with friends.

Cucumber Mint Soda
makes 4 cocktails
1 1/2 cups fresh cucumber juice
1/2 cup freshly squeezed lime juice
1/2 cup Absolut Elyx vodka
1/4 cup simple syrup
1 to 2 cups club soda
crushed ice for serving
lime and cucumber slices for garnish
To make the cucumber juice, puree 2 peeled seedless cucumbers in a blender with a touch of water. Pour the puree through a fine mesh strainer into a large measuring cup.
In a large pitcher, gently muddle the mint with the simple syrup.
Pour the cucumber juice, lime juice, and vodka into the pitcher, combining with the mint simple syrup. Stir well then refrigerate for at least 1 hour.
Before serving, pour in the cold club soda, starting with 1 cup. Taste and if desired, add in more simple syrup and soda.
Pour the mixture over crushed ice and garnish with lime wedges, cucumber slices and mint sprigs.
