A day off work means a day filled with cooking, cleaning, relaxing, and trying to make the best use of my time. The past two days I have been fervently trying to be productive and get things done around my apartment. Why you may be asking? A new start, that's why.
Two weeks ago I put in my notice of resignation at my currently employer as I recently accepted a new position. These two days are the short, yet much needed, break between the two jobs. While leaving any job is bittersweet, I am so excited to start this next chapter in my life. Personally. Professionally. There is so much to be grateful for.
In the spirit of new beginnings, I have taken it upon myself to start completely fresh. Garbage bags in hand, I have begun sifting through my things - clothing, booking, memorabilia - nothing is safe. If I have not worn it in years? It gets donate. If it serves no purpose? It gets thrown away. Another aspect of this "new start" (that I am terrified of, to be rather honest), is eating healthy. While I adore this chocolate mousse, and often find myself snacking on candy, I know that I need to find a healthier balance.
In the meantime, I will allow myself to enjoy just one more serving of this deliciously rich dark chocolate mousse.
Dark Chocolate Mousse
2 cups chilled heavy cream, divided
1 1/2 cups dark chocolate chips
1/4 cup honey
- Stir 3/4 cup cream, chocolate, and honey in saucepan over low heat until smooth. Cool for a few minutes, stirring occasionally.
- In a separate bowl, beat 3/4 cup cream to soft peaks. Fold cream into chocolate mixture in two additions.
- Divide mousse among 6 glasses or ramekins. Refrigerate until set, about 2 hours.
- Garnish with raspberries and pint sprig.
