I am writing this article slightly upset that I scoured the city of Chicago only to come up empty handed. How is it possible that I could not find Kefir cheese anywhere in this city? Really though, is it that uncommon of a product? Am I going to start producing Kefir cheese in the comfort of my own apartment? Give me the milk kefir and cheesecloth and I'll have at it!
This recipe is intended to use Kefir cheese, but due to the lack of said ingredient within the great Chicagoland area, I was forced to substitute. It worked. It just was not preferred.
As with most weekends, I spent much of my time trying to get on top of chores around the house, getting articles written and emails sent out for Smak, and getting to a good place to start the new week. Reading and writing consumes much of my weekends. This weekend was no different. A delicious breakfast and a glass or two of iced coffee will always help make things better.

Kefir cheese (or cream cheese style spreads - I used Kite Hill, made with almond milk)
dried minced onion
dried minced garlic
- Smear slice of bread (toasted if you'd prefer) with Kefir cheese.
- Sprinkle with sesame seeds, poppy seeds, dried minced onion, dried minced garlic and coarse salt.
