Have you ever had plans and thing don't go quite as you expected them to? You had a big meeting and didn't prepare quite as much as you should have. You were rooting for the underdogs in a big game and they actually ended up winning. Your car's engine died and you had to spend money that you didn't have to get it fix. Well, I have a similar story from this past Friday. Although it's not quite as dire a situation.

My office closed early due to Good Friday and I was expecting to catch and early train back to Libertyville to spend the weekend with family. At the last-minute, my co-workers ask if I want to grab a drink after work. Sure, why not? One never hurt anybody, I thought. Well, one turned into two, which turned into a few more. What I was expecting to be a quick after-work drink turned into a Friday afternoon at Public House in Chicago's River North neighborhood. I am not complaining, I had a blast and was even able to capture my first gif using Boomerang to post on Instagram. Where things took a turn south was that I had originally planned for a longer period of time to make myself dinner once I got home. Long time no more. I didn't get home until after 8:00pm.

What does Tommy do when it comes to needing a meal in a limited amount of time? Pinterest, of course! After pouring myself a nice glass of red wine (not sure this was needed), I browsed the website looking for something quick and easy to make. My mom had shrimp in fridge for another recipe we had planned planning. Garlic, ginger, honey and soy sauce are staples that everyone should have in their pantry. Friday night dinner found!

My one complaint - I prefer food with a little more kick to it. Next time I make this recipe (let's face it - I will need to make more quick and easy meals in the future), I will definitely do some tweaking to balance out the sweetness with a little kick of spice.


| Honey Garlic Shrimp Skillet |

1 lb. shrimp, peeled and deveined with tail on

1 teaspoon garlic, minced
½ teaspoon ginger, minced
4 tablespoons honey
2 tablespoons soy sauce


  1. Combine the sauce ingredients and divide it into half.
  2. Marinate the shrimp with one half of the sauce for 15-30 minutes. Discard marinade.
  3. Over medium high heat in a 10" skillet, pan sear the shrimp in some oil. Sear them on both sides in two batches until browned, about 1 minute per side.
  4. Using tongs, rub the shrimp into the caramelized bits on the bottom of the pan.
  5. Dish and serve hot drizzled with the remaining sauce.
