Good morning, sunshine!
The slightly depressing fact is that Monday is upon us. Like every other weekend, Saturday and Sunday decided to go too quickly and we are all faced with the fact that we must get up, go through our morning routine and tackle another day of work.
My body is exhausted from this morning's workout. My eyes slightly crusty from the quick power nap that I took after getting showered and ready for the day. At the same time, I am strangely ready for this new week. Why? I really haven't the faintest idea. Perhaps it is because I am on a new health kick where I've been working out regularly and trying my best to keep my eating in check.
So this morning, instead of grumbling and complaining that we have another work week ahead of me, I choose to keep an optimistic mindframe. Today is going to be good. This week is going to be good. I am going to give it everything I have and damn it, I am going to enjoy this hummus avocado toast to get the whole thing rolling.
Hummus Avocado Toast
slice of toast
cilantro jalapeño hummus (from Trader Joe's, but you can use any hummus you'd like)
avocado, thinly sliced
freshly ground black pepper
- Spread the toast with hummus, top with avocado, crumbled feta and freshly ground black pepper.
