Yesterday was flipping gorgeous.
Chicago is a city that is known for its extremes. Weeks of weather that are worthy of the term "polar vortex" followed by sunny warm weather in a seemingly cold season. That is Chicago. If you think you are going to come to this city and get a normal progression of weather, you're crazy! That's not how we do here in the Second City. Until it is July 4th, you better have sweaters within reach just in case we get a nasty cold front.
So here we are, March 24, and I am freaking out at the amazing weather that Mother Nature blessed us with yesterday. While I may not have had the time to leave the office during the day, I walked out the front doors of my office at 6:00 and was welcomed by the most amazing, refreshing, invigorating breath of fresh warm spring air. The jacket that hung on my shoulders was simply a formality. March 23rd? Yea, you need to have a jacket just out of principle. Forget whether or not the weather truly requires a jacket, just put one on. As I walked to the subway station, I began getting warm. The air smelled fresh, a slight scent of garbage hung in the air. I looked around, the sun still hanging in the sky, and saw people wearing sunglasses, taking off their jackets and sweaters. Screw it! I am not going to torture myself by weather an unnecessary jacket.
When my apartment complex decides to continue running the heat during this weather I grow increasingly impatient. Windows open. Sweaters off. Pants off. Cold refreshing cocktail in hand. Wait a minute. Cold cocktail in hand? Yup. Lakeview Associates, if you are going to keep the heat on during this insanely beautiful weather, I am going to pretend that it is summer outside and make myself a margarita. That's simply what you have to do something. Take control of the situation and make the best of it.
I've been interested in making infused alcohol for quite some time and decided that there is nothing quite like the presence. So with a few slices of a knife I was dunking jalapeño slices into a tequila bottle and prepping myself for some delicious boozy spiciness. The combination of cucumber and jalapeño is the ideal pair for a summertime drink. A nice kick of heat followed by a soothing coolness. It's perfect. Please help me by saying hello to the official cocktail of Chicago's 2016 Summer!

Recipe from Husbands That Cook
For the jalapeño-infused tequila:
1 750ml bottle of tequila
2 green jalapeños, sliced
For the jalapeño-cucumber purée:
2 large cucumbers
1 green jalapeño
For each margarita:
1 1/2 oz jalapeño-infused tequila
1 1/2 oz freshly-squeezed lime juice
1 oz agave syrup
2 oz jalapeño-cucumber purée
Tajin to rim the glass
jalapeño and cucumber slices for garnish
To make the jalapeño-infused tequila:
- Pour the tequila into a jar or pitcher, and add the jalapeño slices.
- Stir or shake to combine, and let sit overnight.
To make the jalapeño-cucumber purée:
- Combine the cucumbers and jalapeños in a blender and process until smooth.
To assemble the margaritas:
- Pour about a tablespoon of Tajin spice on a small plate. Rub the rim of a tumbler or margarita glass with a cut lime wedge, then dip the rim in the Tajin to coat the rim evenly.
- In a cocktail shaker, stir together the infused tequila, lime juice, agave syrup, and jalapeño-cucumber puree, then pour into the prepared glass over ice.
- Garnish the rim of the glass with slices of jalapeño and cucumber if desired. Cheers!
