We've made it to December 31, 2014! HAPPY NEW YEAR'S EVE!
Perhaps my favorite part about New Year's Eve is taking the time to look back on the previous year. The accomplishments that you'd have. The places or situations in which you would have done things a little differently. And then using those memories as a springboard for what you want to change and accomplish in the new year. Typically I do not like dwelling on the past. There is no use in worry about what is already over. But in this situation, I find it so therapeutic and helpful in moving forward into the next year with a fresh clean slate. So while I am vigorously working on my New Year's resolutions, take a few minutes to enjoy this final champagne cocktail.
Pomegranate juice is one of my favorites. Rich with antioxidants, it is the perfect choice for any occasion - a quick drink first thing in the morning, the base for your after-workout smoothie, or an addition to your New Year's Eve champagne.
Feel free to adjust the ratio of pomegranate juice to champagne as you see fit. Some people may prefer more of the tart flavors of the pomegranate juice compared to the dryness of the champagne. Garnish the cocktail with a few floating cranberries or a sprig of fresh rosemary and you'll be dancing your way to midnight and that first kiss of the new year.
Have a fun and safe New Year's Eve - see you in 2015!
