Let me just say thank you Cooking Light for providing me with an incredibly quick and easy recipe to make! I sincerely wish it were easier to find time to spend a few hours during the week to make meals, but that just is not the case. Last night I was up until 1:15am getting things done. So, when I can find a 5 ingredient recipes that only takes about 15 minutes to prepare I will jump right on it.
What today taught me was that perhaps we could a do well with at least 1 quick and easy weeknight recipe a week. Whether you are a working mom, a high executive bachelor, or a blogger trying to write, cook and photograph on top of a normal day job, we could all use a few easy meals from time to time. Beginning next week, SMAK will bring you a recipe with limited ingredients and a quick prep time every Tuesday.
For these lettuce wraps, I had already had a lot of the ingredients in my refrigerator or pantry, which made things a lot easier. I chose to use the 3-minute organic brown rice in the freezer from Trader Joe's instead of a brand like Uncle Ben's. The best part of these types of recipes is being able to improvise - use what you have in your kitchen. Don't have green onions? No worries. Have red onion instead? Use that! You make not end up making what you set out to cook, but in the end, you will have made something all your own.

Southwestern Chicken Lettuce Wraps with Spicy Chipotle Sauce Recipe from Cooking Light Fresh Food Fast Weeknight Meals cookbook
1 (8.8-ounce) package microwaveable precooked whole-grain brown rice 2 cups shredded rotisserie chicken 3/4 cup fresh salsa 1/3 cup chopped green onion (about 3) 1 (15-ounce) can black beans 12 iceberg lettuce leaves spicy chipotle sauce, to taste (recipe below)
- Prepare rice according to package directions. Place rice in a large bowl.
- Stir in chicken, salsa, green onions and black beans.
- Spoon chicken mixture in center of lettuce leaves. Fold in edges of leaves; roll up, and secure with wooden picks.
- Serve with spicy chipotle sauce.
Spicy Chipotle Sauce
1/2 cup reduced-fat sour cream 1 tablespoon chopped fresh cilantro 1 tablespoon fresh lime juice 1/2 ground cumin 1/4 teaspoon chili powder
- Combine all ingredients in a small bowl.
