Kinfolk Magazine. If I am being completely honest with you, I have only ever enjoyed the beautiful photography of Kinfolk Magazine. I pine with jealously at the innate attention to detail, light, and composition. It could be as simple as a woman sitting at a table; hands gently placed on top one another. But in these photographs, stories are told, emotions are evoked, inspirations are sparked. That is until a few days ago when I was in my hometown, spending a few days with family. I slept in later than normal and cooked myself breakfast consisting of a latte and a spicy fried egg topped with sriracha and crumbled feta. As I enjoyed the quiet to myself, I flipped through the pages on the most recent edition of Kinfolk and began reading. Life. Changed.

While I cannot speak for others, it can be very difficult for me to sit down at your computer and write. Or sit down in your wing-backed chair and get lost in a novel. The noisy hum of the air conditioner. The honking of taxi cabs. The music playing in the background that is supposed to act as white noise. All these things can play a part in my story. Some days they will act as incredible inspiration. Others they will drive me crazy, making it impossible to be productive.

I’ve been wrestling with a quote that I came across in Kinfolk’s Essentials Edition – Margaret Everton writes, “The heart of essentialism isn’t about asking how little we can live with, but determining what we simply cannot live without.” This is so opposite my normal thought process. Here I am, living in a 400-square foot studio apartment in Chicago’s Lincoln Park neighborhood. I have a television but no cable. I have a computer but no Internet. Since I’ve moved in all I have concerned myself with are the things that I can live without. I’d be lying if I said that cable and Internet were luxuries I didn’t want.

So my challenge to myself, and to you, is this: Do not dwell on the things that you do not have, whether by choice or by circumstance. Instead, focus on the things in life that you cannot live without. Food. Shelter. Family. Friends. These will be different for every person. Another thing – don’t compare yourself to others around you. Trust me, I struggle with this. It is easy to see what others have and what you want. Stop that.

As you look forward at the week ahead, pick one morning to wake up a little earlier than usual. Go to your kitchen and make a cup of coffee or tea. Turn on the stove and fry up an egg – trust me this recipe is now something that I want to start everyday with. While you’re enjoying a few moments of quite, write down your Essentials – write down the things that you simply cannot live without.

| Spicy Fried Egg Topped with Avocado and Crumbled Feta | Serves 1

Ingredients: 1 teaspoon coconut oil 1 large egg Salt and freshly ground black pepper ½ avocado, pitted and sliced Feta cheese, crumbled Sriracha

Directions:

  1. Heat the oil in a small pan over medium-high heat until shimmering.
  2. Add the egg and season with salt and pepper.
  3. Cook for 3 to 6 minutes, or until the egg white becomes opaque and the yolk sets to the desired doneness.
  4. Transfer the egg to a plate, and then top with the avocado and crumbled feta and sriracha to taste. Serve immediately.
