August 18, 2015. I am writing this article from the confines of the studio apartment. The sounds of rain and thunder shake my walls. The lights have been turned off and the only source of light comes from my computer screen. Beside my bed sits a stool with a bowl full of ice cream. Yes, it is the second night in a row that I’ve eaten ice cream for dinner. Pathetic? No. Unhealthy? Perhaps, but that is beside the point. My iPhone quietly plays Oh My My by Ruelle on Spotify. I’ve learned to only listen to music that I do not know by heart, in an effort to lessen the chances of being distracted.
August 18, 2015. The internal struggle is real. I live in Chicago and know that I am supposed to long for the summer months. The months were the sun shines bright and the temperatures shift upward. The months were people emerge from their homes and eat al fresco and lay on the beach. I know that I am supposed to love this time of the year. And I do. At least I did. Now all I can think about is how much I hate the heat. Hate the feeling of sweat dripping down my back as I walk to the Red Line for my morning commute. I am supposed to love this time of the year, right? Now all I want is a crisp fall day in October. I want the leaves to be changing colors and falling from the trees. I want to be a basic bitch and drink pumpkin spiced lattes and take Instagram selfies in scarves. Is that really too much to ask?!
August 18, 2015. The fact of the matter is that it is still summer. Summer for at least another month. The heat could linger, welcomed or not. So with that I’ve sucked up my pride and selfish desires and made an attempt to embrace the now. Embrace the summer. Embrace the heat. Embrace my longing to blend up watermelon with rum, sugar-water and lime juice. That really shouldn’t be too difficult, right? As long as I can come home from work, take off my pants and sit in front of the air conditioner with one of these rum watermelon coolers in hand, I will chalk it up as a win. I advise you do the same!
| Rum Watermelon Cooler | Makes 2.5 quarts
¾ cup sugar ¾ cup water 1 cup fresh lime juice 3 cups white rum 4 cups seedless watermelon, chunks 8 cups crushed ice watermelon spears, for garnish
- In a saucepan, combine the sugar and water. Bring to a simmer over moderate heat, stirring until the sugar dissolves. Remove from the heat and let cool.
- In a blender, combine half of the sugar syrup with half of the lime juice, rum and watermelon chunks and blend until combined.
- Add half of the ice and blend until smooth, and then pour into a pitcher.
- Repeat with remaining ingredients.
- Serve in chilled glasses and garnish with watermelon spears.
