I hope you all had a wonderful Thanksgiving, full of lots of family, friends, and of course, food! When I sat down at the dinner table, surrounded by family, I didn't think twice about shoveling plate after plate of food into my mouth. I have starved myself all day and was ready to enjoy some incredibly prepared food. A few hours later, my stomach hurt like no other. I had to unbutton my pants to allow a momentary release from my bloated stomach.
I am not sure how you typically cook for Thanksgiving - do you prepare just enough for your guests to eat? Or do you, like my family, prepare more food than you could ever need? Thanksgiving leftovers is a common occurrence in the Engstrom household. In fact, as I got back into the city this afternoon, I stocked my fridge with leftover turkey, mashed potatoes and stuffing!
I've seen ideas like this panini a number of times on the Internet and decided that it was finally time to breakdown and make it. Boy am I glad that I came to my sense. Please be warned, you will most likely be consuming as much food as you did on Thanksgiving, but it is delicious. All of the ingredients are great separately, so why not throw them into a cheesy grilled sandwich?

Thanksgiving Leftover Panini
Makes 1 sandwich
2 tablespoons dijon mustard
2 slices sourdough bread
2 slices swiss cheese
1/3 cup shredded leftover turkey
3 tablespoons cranberry sauce
1/3 cup stuffing
2 tablespoons gravy
greens, ie spinach, etc
- Spread the mustard on both slices of bread, then lay a slice of cheese on each piece.
- On one side, arrange the turkey and cranberry sauce. On the other slice, lay the stuffing and spoon the gravy on top. Finish with some greens.
- Carefully put the two sides together to make one sandwich. Spread butter on top side of sandwich.
- Invert the sandwich, butter-side down, onto a hot panini maker. Spread butter on the top side.
- Close the panini maker and grill the sandwich until the bread is crusty and golden, the fillings are hot, and the cheese is melted. Enjoy!
