Wild Rice Chicken Soup

I have been saying for quite some time now that fall is officially upon us. I was full of it. It hadn't really shown up yet...I think I was making a desperate attempt to hurry up the season process so I could selfishly enjoy my favorite season of the year. That being said...I can NOW say, that for certain, fall is here. It has to be. I spent this weekend with friends and family celebrating my cousin's wedding. The ceremony was outdoors at a perennial farm in Wisconsin. The cold chill in the air, the overcast skies, the leaves blowing across the lawn, standing around fire pits after the ceremony. It was the perfect fall wedding!

After getting home from the wedding, I walked into a freezing cold house. FREEZING! If you know the Engstrom family at all, you know that we (aka my mother) refuses to turn on the heat until November 1st. "You're fine! Just put on slippers and a sweater." I ended up wearing two hoodies yesterday, both with their hoods pulled tightly over my head. And wool camp socks. And my fur-lined UGG slippers. Yes, it really was that cold! 54° is not an acceptable temperature for a house in the fall.

As dinner approached, there was really only one thing that I wanted to have...


There is nothing better than a hot bowl of homemade soup on a chilling fall's evening. The warmth of the broth sliding down your throat instantly warms your body and makes you feel so comfortable.

My grandma had an amazing recipe for wild rice soup and my mom suggested that we make that. I really wanted to make one of my favorite "dump soups," but we ended up going with my grandmother's recipe. You will for sure be seeing that dump soup in the near future. It's fall...expect lots of soups!

We all know that you will be searching for great fall dinner options...search no further! This is so good! You can go to your local Panera or grocery store and buy bread bowls to serve the soup in. I apologize in advance if you get sick of soup recipes - there may or may not be an overkill of these types of recipes. But come on, it's fall, it's what we all want!

Wild Rice Chicken Soup

3 chicken breasts 6 tablespoons butter 1/2 cup minced onion 1/2 cup sliced carrots 1/2 cup sliced celery 1/2 cup flour 3 cups chicken broth 2 cups cooked wild rice 1 teaspoon thyme 1/2 teaspoon salt 1 cup half and half 2 tablespoons dry sherry (optional) snipped parsley or chives (optional) chopped slivered almonds (optional)

Boil chicken and cut into bite size pieces. Melt butter in sauce pan, sauté onion, celery and carrots until tender. Blend in flour, gradually stir in broth. Cook, stirring constantly until mixture comes to a boil; let boil while stirring for 1 minute. Stir in rice, thyme and salt, simmer for about 5 minutes. Blend in half and half and sherry; heat to serving temperature. Serve with snipped parsley (or chives) and chopped slivered almonds.
